Cracked wheat dosai / Broken wheat dosai

Cracked wheat / broken wheat / samba ravai / godhumai ravai dosai is a crispy and tasty dosai prepared with broken wheat and whole black gram. It goes well with coconut chutney, tomato chutney and coriander chutney.

Cracked wheat dosai

Ingredients:

Serves 3 to 4 people

      • 1 cup - Cracked wheat / samba ravai / godhumai ravai / broken wheat
      • 1/4 cup - Whole black gram without skin / ulunthu / urad dal
      • 1 no - Onion (chopped finely)
      • 1 or 2 nos - Green chillies (chopped finely)
      • 1 tsp - Cumin seeds
      • 1 tbsp - Fresh curry leaves chopped
      • 1 pinch - Asafoetida
      • Salt to taste

Cracked wheat dosai process

Preparation method:

  1. Wash and soak cracked wheat, whole black gram(without skin) each separately in enough water for up to 6 hrs or over night.
  2. Grind whole black gram in a mixer grinder to a smooth paste, set aside.Then grind cracked wheat to a smooth paste, Set aside.
  3. Mix everything well together along with required salt. Consistency of batter should not be too thick or too thin(It should be like our regular idly batter consistency). Ferment this flour for at least 3 to 4 hours or until well fermented.
  4. Now add chopped onion, green chillies, cumin seeds, curry leaves and a pinch asafoetida, mix well.
  5. Heat a dosa tawa and spread the batter like we make for adai dosai. Drizzle oil and cook on both the sides till golden brown. Serve hot with coconut or spicy tomato chutney.

Notes:

  • If you are not using this batter immediately after fermentation, then store it in the refrigerator for later use.
  • Most important thing is do not ferment this batter for overnight. Cracked wheat batter takes very less time to ferment than our regular idly batter. So it is better to check the batter after 3 hrs.
