Ragi wheat cookies

Eggless cookies prepared with ragi flour and wheat flour, which is very simple to make and takes very less time to cook. Kids will love this for sure.

Ragi wheat cookies

Ingredients: yields approximately 20 cookies

      • 2/3 cup - Ragi flour
      • 2/3 cup – Wheat flour
      • 1/2 cup – Butter (add 1 or 2 tbsp extra if needed)
      • 1/3 cup – Sugar
      • 1 tbsp – Yogurt
      • 1/8 tsp – Baking powder
      • 1 tsp – Vanilla essence

Ragi wheat cookies process

Preparation method:

  1. Heat a pan, dry roast ragi flour and wheat flour together until raw smell goes. Set aside.
  2. Take a mixing bowl, add in butter and sugar, mix well to form a texture like cream. Then add vanilla essence, yogurt and once again mix it well like cream.
  3. Now add roasted ragi and wheat flour along with baking powder, mix well to form a crumbly dough. Divide dough into equal portions and make a balls, flatten them slightly with your fingers. Make a impression with a fork as shown in the picture.
  4. Preheat oven to 350 F or 180 C, arrange them in a lining baking tray and bake them for 12 to 15 mins. or until base of cookies start changing color. Allow them to cool completely and store them in an airtight container. Ragi wheat cookies are ready to serve.

Notes:

  • The dough should be crumbly. When pressed between your palm and fingers the dough must hold its shape and when crushed it must crumble.
  • If needed add 1 or 2 tbsp extra butter for making dough.
  • Baking time differs depend on the oven you are using. Mine took 15 mins to cook completely.
