Spinach stir fry
Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A , vitamin C, vitamin E, vitamin K, magnesium, manganese, folate, betaine, iron, vitamin B2, calcium,potassium, vitamin B6, folic acid, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. I usually prepare keerai masiyal with spinach and now I prepared simple stir fry with spinach. It tasted awesome and I hope you all like it too.
Ingredients:
- 1 punch – Spinach / Pasalai keerai
- 1 no – Onion (chopped finely)
- 2 nos – Garlic (chopped)
- 1 tbsp – Roasted pottukadalai powder / roasted dhalia powder
- 1 pinch – Turmeric powder
- Salt as needed
Seasonings:
- 1 tsp – Oil
- 1/4 tsp – Mustard seeds
- 1/4 tsp – Split black gram
- 1/4 tsp – Cumin seeds
- 2 nos – Dry red chillies
- 4 nos – Curry leaves
- 1 pinch – Asafoetida
Preparation method:
- Wash spinach thoroughly and chop them finely, set aside.
- Heat oil in a pan, season with items given in the list for seasoning. Add chopped garlic and onion, saute until translucent.
- Now add chopped spinach along with turmeric powder and required salt, saute for 5 to 6 mins or until spinach is well cooked.
- Finally sprinkle roasted pottukadalai powder and mix well, switch off the stove. Spinach stir fry is ready and serve hot with rice.
Notes:
- For pottukadalai powder, dry roast dhalia / pottukadalai until slightly golden brown color and crush it to a coarse powder. Adding roasted pottukadalai powder helps to reduce moisture in the spinach.
Easy Stir Fry
