Thinai maavu kozhukattai

Thinai maavu kozhukattai is a healthy version of kozhukattai which uses palm jaggery / karuppatti for sweet and sukku podi / dry ginger powder for flavour. Ingredients:

Serves 4 people

      • 1 cup – Thinai maavu / Foxtail millet flour
      • 1 cup – Palm jaggery / Karuppatti
      • 1/4 cup – Grated coconut
      • 1/4 tsp – Cardamom powder
      • 1/4 tsp – Dry ginger powder / sukku podi
      • 2 tsp – Oil
      • Salt to taste

Preparation method:

  1. Dry roast thinai maavu / foxtail millet flour over medium flame until raw smell goes. Add enough salt and oil, mix well. Sprinkle little hot water (approximately 1 or 2 tbsp water)and mix well nicely (as shown in the picture). Cover with lid and set it aside for 10 mins.
  2. Take a pan, add powdered palm jaggery and enough water to cover jaggery, bring it to a boil and cook until jaggery dissolves completely. Remove from flame and strain to remove all impurities.
  3. Pour back jaggery syrup in the same pan, add cardamom powder, sukku podi and grated coconut to it and bring it to boil. Once it starts to boil, add thinai maavu little by little, mix everything well without any lumps and stir until the water is completely absorbed or thick dough consistency. Remove from stove.
  4. Let it cool for a while. When the mixture is still warm, take a small lemon sized mixture and roll them into a modakam or modak shaped dumpling with your hands as shown in the picture. Repeat the same till the mixture gets done. Steam the dumplings for at least 10 mins. Healthy and tasty thinai maavu kozhukattai is ready.

Notes:

  • Make kozhukattai when the mixture is warm. Do not let it open for a long time which will cause the mixture to get dry and ending up in hard kozhukattai. Try to cover with wet cloth until you prepare.
  • Always keep the flame in low or medium while making thinai maavu or foxtail millet flour mixture.
  • You can make any shape with this flour mixture like pidi kozhukattai etc.
